Garlic herb butter pasta

A ten-minute emulsified butter sauce built in the pan with pasta water. Dinner that happens to be dosed, rather than a dessert pretending to be dinner.

  • 6 tbsp infused butter

    Set your infusion strength above and this splits into infused and plain butter to hit whatever dose you want.

  • 400 gdried pastaspaghetti or linguine
  • 4garlic clovesthinly sliced
  • ½ tspchili flakes
  • 1 cupflat-leaf parsleychopped
  • 1lemonzest and juice
  • 1 cupgrated parmesan
  • salt and black pepper

Method

    Boil the pasta in well-salted water until one minute short of al dente. Before draining, save two cups of the water — the starch in it is what holds the sauce together.

    Meanwhile, melt about a third of the butter in a wide pan over a low heat and soften the garlic and chili without coloring them.

    Add the drained pasta and a cup of the pasta water to the pan and bring it to a simmer.

    Take the pan off the heat. Add the rest of the butter a piece at a time, tossing constantly, until the sauce turns glossy and clings. Off the heat matters: a boiling sauce splits, and a split sauce doses unevenly.

    Stir through the parsley, lemon zest and juice, and most of the parmesan. Loosen with more pasta water if it tightens.

    Divide between four warm plates — weigh them if you are being careful — and finish with the rest of the parmesan and plenty of pepper.

Before you eat it

  • These are estimates, not lab results. Treat the low end as the honest number and the high end as the thing to plan around.
  • Start with one serving and wait two hours. Edibles take 30 to 120 minutes to come on, and the most common mistake is redosing before the first one lands.
  • Test a small piece first. Potency is rarely even across a batch, especially if the infusion was not mixed thoroughly.
  • Label anything you store with the date and the estimated dose, and keep it away from children, pets and anyone who did not ask for it.
  • If you overdo it: you are not in danger, but it will be unpleasant. Find somewhere quiet, drink water, and wait it out. Do not drive.
