Herb butter salmon

Roasted salmon finished with a compound butter that melts over the top. The butter never sees the oven, which makes this one of the most potency-efficient ways to dose a dinner.

    Mash the softened infused butter with the dill, chives, lemon zest, garlic and a good pinch of salt until it is evenly green. Divide it into four equal portions on a plate and chill.

    Heat the oven to 400 °F. Pat the salmon dry, rub lightly with plain olive oil, and season.

    Roast until the thickest part is just opaque and flakes under gentle pressure. Pull it a minute early rather than a minute late.

    Put one portion of the herb butter on each hot fillet and let it melt. Serve immediately with lemon.
