Brown butter mashed potatoes

Ingredients
6 tbsp infused butter
Set your infusion strength above and this splits into infused and plain butter to hit whatever dose you want.
- 1 kgfloury potatoes — peeled, cut into even chunks
- ½ cupwhole milk or cream — warmed
- 2garlic cloves — optional, simmered with the potatoes
- salt and white pepper
Method

Cover the potatoes with cold salted water, bring to a boil and simmer until a knife slides through without resistance.

Drain thoroughly and let them steam dry in the colander for two minutes. Wet potatoes make a gluey mash.

Rice or mash them back into the warm pan, off the heat.

Fold in the warm milk first, then the infused butter, working it in gently. Off the heat and gently: hot enough to melt is all you need, and overworking makes it sticky.

Season hard and serve, dividing into six even portions.

Before you eat it

- Start with one serving and wait two hours. Edibles take 30 to 120 minutes to come on, and the most common mistake is redosing before the first one lands.
- Test a small piece first. Potency is rarely even across a batch, especially if the infusion was not mixed thoroughly.
- Label anything you store with the date and the estimated dose, and keep it away from children, pets and anyone who did not ask for it.
- If you overdo it: you are not in danger, but it will be unpleasant. Find somewhere quiet, drink water, and wait it out. Do not drive.
