Skillet cornbread

Baked in a hot cast-iron pan for a crisp edge. A sturdy, savory way to carry a light dose to a dinner table.

Method

    Put a 10-inch cast-iron skillet in the oven and heat both to 425 °F.

    Whisk the buttermilk, egg, honey and the melted infused butter together. Make sure the butter is cool enough not to scramble the egg but warm enough to stay liquid.

    Whisk the cornmeal, flour, baking powder and salt in a separate bowl, then fold the wet into the dry until just combined. Lumps are fine.

    Take the hot skillet out, swirl the plain butter around it until it sizzles, and pour the batter straight in. It should hiss.

    Bake until golden and set in the middle.

Standard Northern-style cornbread: 1 cup cornmeal, 1 cup flour, 1 cup buttermilk, 1 egg, ⅓ cup fat, 1 tbsp baking powder.
