Garlic butter green beans

Blanched until they still snap, then tossed in infused butter off the heat. A side dish that carries a light dose for a table where not everyone wants a brownie.

    Boil the beans in well-salted water until crisp-tender — four minutes, no more.

    Drain and tip straight into ice water to stop them cooking. Drain again and dry them well; wet beans will not hold butter.

    Warm a large pan over low heat, add the infused butter and the garlic, and let the garlic soften without taking any color. Low heat throughout: this is a warm pan, not a hot one.

    Take the pan off the heat, add the beans and toss until every one is coated and glossy.

    Finish with lemon, salt, pepper and the almonds, and divide into six portions.
