8 tbsp infused butter

- 1½ cupscreamy peanut butter — the stabilized kind, not a natural grind

- ½ tspfine salt
- 12 ozsemisweet chocolate — chopped and divided

Beat the softened infused butter with the peanut butter, vanilla and salt until the mixture is smooth. Softened, not melted — melting is heat the infusion does not need, and it makes the filling greasy rather than firm.

Work in the confectioners' sugar a cup at a time until the filling holds a shape like stiff cookie dough. If it slumps when you set a ball down, add more sugar by the tablespoon.

Roll 36 equal balls with a leveled tablespoon scoop or a scale. All of the dose lives in this filling, so an oversized ball is an oversized serving — this is the step worth being fussy about.

Chill the balls on a lined tray until cold and firm. A soft center will not hold a toothpick and will smear into the chocolate.

Temper the chocolate by seeding: melt three-quarters of it over barely simmering water, lift the bowl off, and stir in the remaining quarter until smooth and no longer warm against your lip. There is nothing infused in this bowl, so a real temper is worth the effort — it gives the shell a snap and keeps it from going chalky gray in a week.

Let the balls stand a minute out of the refrigerator so they stop sweating before dipping. Water is what seizes chocolate, and condensation counts.

Spear each ball with a toothpick, dip it three-quarters of the way so a circle of peanut butter stays bare, and set it back on the parchment. Smooth the toothpick hole closed with a fingertip.

Chill until set, then store in a marked container in the refrigerator. These are indistinguishable from the buckeyes at a church bake sale, which is exactly the problem — keep them away from children and from guests who have not been told.

Before you eat it
- These are estimates, not lab results. Treat the low end as the honest number and the high end as the thing to plan around.
- Start with one serving and wait two hours. Edibles take 30 to 120 minutes to come on, and the most common mistake is redosing before the first one lands.
- Test a small piece first. Potency is rarely even across a batch, especially if the infusion was not mixed thoroughly.
- Label anything you store with the date and the estimated dose, and keep it away from children, pets and anyone who did not ask for it.
