No-bake peanut butter cups

Two layers, a muffin pan and a freezer. No oven, no smell, and the dose lives in the filling where you can measure it exactly.

Method

    Line a 12-cup muffin pan with paper liners.

    Melt the chocolate gently, either in short bursts in the microwave or over barely simmering water. Keep it just warm, never hot.

    Beat the infused coconut oil, peanut butter, powdered sugar, vanilla and fine salt together until smooth and stiff enough to hold a shape. All of the dose is in this mixture, so work it until it is completely uniform.

    Divide half the chocolate between the liners and tilt each one so it coats the base. Freeze for 10 minutes.

    Divide the peanut butter filling into 12 equal balls — use a scoop or weigh them — and press one flat into each cup.

    Cover with the remaining chocolate, tap the pan to level it, and finish with flaky salt.

    Chill for at least an hour before eating. Keep them in the fridge; coconut oil softens fast at room temperature.

Standard two-layer no-bake cup: 2 cups chocolate thinned with 2 tbsp fat for the shells, 1 cup nut butter stiffened with 1/2 cup powdered sugar for the filling.

Every recipe here names the conventional ratio underneath it. The cannabis part is a fat substitution, not new chemistry — so if the base is sound and the substitution is sound, the recipe is sound.

Before you eat it
