Fudgy one-bowl brownies

A high-fat, low-flour brownie that bakes dense rather than cakey. The cocoa does most of the work of hiding the infusion.

Method

    Heat the oven to 350 °F and line an 8-inch square pan with parchment, leaving an overhang.

    Melt the butter gently — warm enough to be liquid, no hotter. Whisk in the sugar until it looks like wet sand.

    Beat in the eggs one at a time and then the vanilla, and keep beating for a full minute. That minute is what gives you the papery top.

    Fold in the cocoa, flour and salt, then the chopped chocolate. Stop as soon as it comes together.

    Spread into the pan and level it carefully. An uneven slab cuts into uneven doses.

    Bake until a skewer comes out with moist crumbs, not clean.

    Cool completely in the pan before cutting. Warm brownies tear, and torn squares are not equal squares.

    Lift out by the parchment and cut into 16 even squares with a long knife, wiping it between cuts.

Standard fudgy brownie ratio: ¾ cup fat, 1½ cups sugar, 3 eggs, ¾ cup cocoa, ¾ cup flour — high fat and sugar against low flour is what makes it fudgy rather than cakey.

Every recipe here names the conventional ratio underneath it. The cannabis part is a fat substitution, not new chemistry — so if the base is sound and the substitution is sound, the recipe is sound.
