Chicken parmesan

A full dinner rather than a dessert. The chicken is fried and baked at temperatures no infusion survives, so the dose rides in the sauce that goes on top.

    Warm the marinara, then take it off the heat and stir the infused olive oil right through it. Set it aside. Everything else in this recipe happens at a temperature that would destroy it.

    Pound the cutlets to an even thickness and season them.

    Set up flour, beaten egg and breadcrumbs mixed with half the parmesan in three dishes, and bread each cutlet in that order.

    Shallow-fry in neutral oil over medium-high until golden on both sides — about three minutes a side. Plain oil only.

    Arrange the cutlets in a baking dish, spoon the infused sauce over each one, and top with mozzarella and the rest of the parmesan.

    Bake at 400 °F just until the cheese melts and browns. Keep it short: the sauce is carrying the dose now and it does not want a long stay in the oven.
