Chocolate fudge

Two ingredients plus the infusion, no candy thermometer, no oven. The most forgiving way to make something strong and cut it small.

  • 4 tbsp infused butter

    Set your infusion strength above and this splits into infused and plain butter to hit whatever dose you want.

  • 14 ozsweetened condensed milk
  • 3 cupssemisweet chocolate chips
  • 1 tspvanilla extract
  • ½ tspfine salt

Method

    Line an 8-inch square pan with parchment, leaving an overhang to lift it out by.

    Warm the condensed milk and chocolate chips together over the gentlest heat you can manage, stirring constantly, until just melted and smooth. Take it off the heat the moment it comes together.

    Stir in the infused butter, vanilla and fine salt off the heat, working it until there is no streaking. The residual warmth is more than enough to melt the butter.

    Scrape into the pan and level the top carefully. This is a slab you will cut blind, so an even surface is an even dose.

    Finish with flaky salt and chill for at least three hours.

    Lift out by the parchment and cut into 32 small pieces. Small is right — fudge is rich and this is a 5 mg piece, not a square of dessert.

Before you eat it
