Chocolate sheet cake

A thin sheet cake cut into a grid, which makes it the easiest cake to dose accurately. The frosting carries the infusion so none of it goes through the oven.

Method

    Heat the oven to 350 °F and grease a 9x13 pan.

    Whisk all the cake dry ingredients together, then beat in the eggs, buttermilk and plain oil until smooth.

    Stir in the hot coffee last. The batter will look alarmingly thin — that is correct and it is what makes the crumb tender.

    Bake until the center springs back.

    Cool completely. The frosting carries the dose and it must not go onto a warm cake — melting it would run the infusion to the edges.

    Beat the infused butter with the powdered sugar, cocoa and milk until smooth and spreadable. Add milk a teaspoon at a time if it is stiff.

    Spread evenly right to the corners. Even frosting is the whole dosing story here, since the cake underneath carries nothing.

    Mark a 4x5 grid before you cut, then cut 20 even squares.
