Creamy tomato soup
Canned tomatoes cooked down with onion and garlic, blended smooth, then finished with cream and a slug of olive oil once the pot is off the burner. Ladling measured bowls is what keeps the servings honest.

Sweat the onion in the plain olive oil over medium-low heat until soft and sweet with no color on it. This pan stays hot for ten minutes, which is exactly the kind of step that should never get the infused oil.

Add the garlic for a minute, then the tomato paste, and keep stirring until the paste darkens to brick red. Cooking the paste takes the tinny raw edge off it.

Add the tomatoes, crushing each one in your hand as it goes in, then the stock, sugar and a good pinch of salt. Simmer uncovered until the raw tomato smell is gone and the soup has tightened slightly.

Blend until completely smooth. If you use an upright blender, fill it halfway and vent the lid — hot soup expands and will lift the lid off.

Return the soup to the pot over low heat and stir in the cream. Do not let it boil after the cream goes in.

Take the pot off the burner entirely and let it stop steaming, then whisk in the infused olive oil until you cannot see beads of it on the surface. Floating oil is a concentrated dose waiting for whoever gets that ladleful.

Before you eat it
- These are estimates, not lab results. Treat the low end as the honest number and the high end as the thing to plan around.
- Start with one serving and wait two hours. Edibles take 30 to 120 minutes to come on, and the most common mistake is redosing before the first one lands.
- Test a small piece first. Potency is rarely even across a batch, especially if the infusion was not mixed thoroughly.
- Label anything you store with the date and the estimated dose, and keep it away from children, pets and anyone who did not ask for it.
- If you overdo it: you are not in danger, but it will be unpleasant. Find somewhere quiet, drink water, and wait it out. Do not drive.
