Lemon bars
Shortbread base carrying the dose, sharp lemon curd on top. The infusion lives in the crust, which bakes gently, rather than in a custard that sets at a higher temperature.

½ cup infused butter
Set your infusion strength above and this splits into infused and plain butter to hit whatever dose you want.

- ⅔ cuplemon juice — freshly squeezed

Heat the oven to 350 °F and line an 8-inch square pan with parchment.

Rub the infused butter into the flour, powdered sugar and salt until it looks like damp sand and holds together when squeezed.

Press firmly and evenly into the pan. All of the dose is in this layer, so an even base is an even bar.

Bake the base until pale gold at the edges.

While it bakes, whisk the eggs, granulated sugar, lemon juice, zest and flour until smooth.

Pour the topping over the hot base and return it to the oven until the center barely wobbles.

Cool completely, then chill for two hours before cutting. Warm lemon bars tear and torn bars are uneven ones.

Cut into 16 even bars with a hot, dry knife, wiping between cuts. Dust with powdered sugar just before serving.

Before you eat it

- Start with one serving and wait two hours. Edibles take 30 to 120 minutes to come on, and the most common mistake is redosing before the first one lands.
- Test a small piece first. Potency is rarely even across a batch, especially if the infusion was not mixed thoroughly.
- Label anything you store with the date and the estimated dose, and keep it away from children, pets and anyone who did not ask for it.
- If you overdo it: you are not in danger, but it will be unpleasant. Find somewhere quiet, drink water, and wait it out. Do not drive.
