Olive oil banana bread

An oil-based loaf rather than a creamed-butter one, which makes it forgiving, one-bowl, and easy to slice into even portions.

Method

    Heat the oven to 350 °F and line a 9x5 loaf pan with parchment.

    Whisk the mashed banana, sugar, eggs, vanilla and infused oil together in one bowl until completely smooth. Any pocket of unmixed oil becomes a hot slice later.

    Fold in the flour, soda, salt and cinnamon until just combined. Lumps are fine; overmixing makes it tough.

    Pour into the pan and level the top.

    Bake until a skewer comes out clean and the loaf has a deep crack down the middle.

    Cool completely in the pan before slicing. Cut into 10 even slices — mark the loaf before you start rather than eyeballing as you go.
