Maple pecan granola

A low, slow granola that bakes gently enough not to punish the infusion. Makes a jar that lasts a fortnight and doses itself by the spoon.

  • ½ cup infused coconut oil

    Set your infusion strength above and this splits into infused and plain coconut oil to hit whatever dose you want.

Method

    Heat the oven to 300 °F. Low is deliberate — granola at 350 °F is faster and costs you both terpenes and potency.

    Warm the coconut oil just to liquid and whisk it with the maple syrup, vanilla, cinnamon and salt.

    Pour over the oats, nuts and seeds and toss until every oat looks damp. Uneven coating is uneven dosing.

    Spread on a lined tray in a thin, even layer and press it down lightly.

    Bake for 40 minutes, stirring once at the halfway mark. It will still look soft when it comes out.

    Cool completely on the tray without touching it — that is when it crisps and forms clusters.

    Store in a sealed jar. One serving is a scant half cup; measure rather than pouring, or the dose is a guess.

Before you eat it

  • These are estimates, not lab results. Treat the low end as the honest number and the high end as the thing to plan around.
  • Start with one serving and wait two hours. Edibles take 30 to 120 minutes to come on, and the most common mistake is redosing before the first one lands.
