Spinach artichoke dip

Ingredients
4 tbsp infused olive oil

- 14 ozartichoke hearts — drained and chopped
- 1 cupgrated parmesan
- 1 cupshredded mozzarella

Heat the oven to 375 °F.

Squeeze the spinach until it stops giving up water, then squeeze again. Wet spinach makes a loose dip that separates, and a separated dip doses unevenly.

Beat the cream cheese, sour cream and infused olive oil together until completely smooth before anything else goes in. Getting the oil fully dispersed now is what makes a shared bowl safe to share.

Fold in the spinach, artichokes, garlic, parmesan and half the mozzarella, and season well.

Spread into a small baking dish, top with the rest of the mozzarella, and bake until bubbling at the edges.
