3 tbsp infused olive oil

- 1jalapeño — deseeded and minced
- ½ cupcilantro — chopped

Method

Mash the avocados to the texture you like — chunky holds up better to scooping.

Stir in the infused oil first and work it right through before anything else goes in. This is the step that decides whether the dose is even.

Fold in the lime juice, onion, jalapeño and cilantro, and salt it generously.

Serve straight away in six portions. If people are dipping from a shared bowl the dose stops being predictable — say so, or portion it out.

Before you eat it

- Label anything you store with the date and the estimated dose, and keep it away from children, pets and anyone who did not ask for it.
- If you overdo it: you are not in danger, but it will be unpleasant. Find somewhere quiet, drink water, and wait it out. Do not drive.
