Whipped feta dip

Method

    Blend the feta, yogurt, garlic, lemon zest and juice until completely smooth. Scrape the bowl down at least once — pockets of unblended feta become pockets of uneven dose later.

    With the motor running, pour in the infused olive oil in a steady stream and let it run another thirty seconds.

    Taste and adjust with pepper and more lemon. Feta is salty enough that it rarely needs salt.

    Spread into a shallow bowl and finish with chili flakes. Serve as six portions — if people are dipping freely from one bowl the dose stops being predictable, so say so or plate it.
