    In a second bowl, whisk the buttermilk, egg yolks and vanilla, then whisk in the cooled infused butter until the mixture looks uniform rather than beaded with fat.

    Whip the egg whites to soft peaks. They should slump when you lift the whisk, not stand up stiff — stiff whites break into lumps instead of folding in.

    Pour the wet mixture into the dry and stir until the flour just disappears, then fold in the whites in two additions. Let the batter rest 10 minutes so the flour hydrates.

    Heat the waffle iron all the way through and brush it with neutral oil. An iron that is not fully hot steams the batter instead of crisping it.
