Buttermilk pancakes

Three of the sources we surveyed carry a pancake recipe and none of them mention the problem: a griddle runs far hotter than an infusion survives. The butter goes on top, not in the pan.

Method

    Divide the softened infused butter into 8 equal portions on a plate and refrigerate. Doing this first is what makes the dose even — a griddle cooks pancakes at wildly different rates and you cannot dose them by eye afterward.

    Whisk the buttermilk, egg and plain melted butter together.

    Whisk the flour, sugar, baking powder, soda and salt in a second bowl, then pour the wet into the dry and stir until just combined. Lumps are correct; a smooth batter makes tough pancakes.

    Rest the batter for ten minutes while the griddle heats to medium.

    Cook the pancakes in plain butter until bubbles break across the surface and the edges look set, then flip once.

    Top each hot pancake with one portion of the infused butter and let it melt. Never put the infusion in the batter — a griddle runs around 375 °F, which is far above anything an infusion survives.

    Serve with syrup, and spoon any melted butter left on the plate back over the top.

Standard buttermilk pancake: 1½ cups flour, 1¼ cups buttermilk, 1 egg, 3 tbsp fat, 1 tsp baking powder, ½ tsp soda.

Every recipe here names the conventional ratio underneath it. The cannabis part is a fat substitution, not new chemistry — so if the base is sound and the substitution is sound, the recipe is sound.

Before you eat it

  • These are estimates, not lab results. Treat the low end as the honest number and the high end as the thing to plan around.
  • Start with one serving and wait two hours. Edibles take 30 to 120 minutes to come on, and the most common mistake is redosing before the first one lands.
  • Test a small piece first. Potency is rarely even across a batch, especially if the infusion was not mixed thoroughly.
  • Label anything you store with the date and the estimated dose, and keep it away from children, pets and anyone who did not ask for it.
  • If you overdo it: you are not in danger, but it will be unpleasant. Find somewhere quiet, drink water, and wait it out. Do not drive.
