Chocolate chip muffins

An oil-based muffin, which makes it one-bowl and forgiving. Portioned into a pan with twelve equal wells, which is the easiest even dosing you can get from a baked good.

    Set your infusion strength above and this splits into infused and plain coconut oil to hit whatever dose you want.

Method

    Heat the oven to 375 °F and line a 12-cup muffin pan.

    Whisk the milk, eggs, vanilla and the cooled infused oil until completely uniform. Cooled matters — hot oil scrambles the eggs, and any pocket of unmixed oil becomes one very strong muffin.

    Whisk the flour, sugar, baking powder and salt together, then fold the wet into the dry until the flour just disappears.

    Fold in the chocolate chips.

    Divide between the 12 wells with a scoop so each gets the same amount. A scoop is not fussiness here; it is the dose.

    Bake until domed and springy in the center.

Before you eat it
