Honey glazed spiced nuts

Roasted first, glazed with infused honey after they cool. Infused honey is less efficient than fat, so this leans on the glaze going on cold rather than being baked.

  • 4 tbsp infused honey

    Set your infusion strength above and this splits into infused and plain honey to hit whatever dose you want.

  • 1 tspsmoked paprika
  • ½ tspcayenne pepper
  • 1 tspflaky salt
  • 1 tspchopped rosemary

Method

    Heat the oven to 300 °F and line a sheet pan with parchment.

    Toss the nuts with the plain oil, paprika, cayenne and rosemary and spread them in a single layer.

    Roast until fragrant and a shade darker, stirring once halfway.

    Let them cool on the pan until barely warm. This wait is the whole recipe: infused honey poured onto hot nuts, or baked with them, loses a meaningful share of what you made.

    Warm the infused honey just enough to pour — no hotter than a bath — and toss it through the nuts until every one is tacky.

    Spread out again, sprinkle with flaky salt and leave to set. Store in a jar and measure a serving rather than eating from it.
