Rocky road
Chocolate, marshmallows and nuts set in a pan and cut into squares. The marshmallows go in after the chocolate has dropped to barely warm, or they melt and the whole pan turns into fudge.

3 tbsp infused coconut oil

- 1½ cupsroasted almonds — roughly chopped
- ½ tspflaky sea salt

Line a 9-inch square pan with parchment, leaving an overhang on two sides so the slab lifts out in one piece.

Melt three-quarters of the chocolate in a dry bowl over barely simmering water, then take it off and stir in the remaining quarter until smooth. Keep the bowl and the spatula dry — water seizes chocolate into a paste that no amount of stirring will bring back.

Stir in the infused coconut oil and the salt, then leave the bowl on the counter until the chocolate feels cooler than your finger.

Fold in the almonds first, then the marshmallows, turning until every marshmallow has a coat on it. Chocolate at this temperature holds its shape around them; hot chocolate melts them into white streaks and the mixture goes soupy.

Keep folding for another half minute after it looks done. The chocolate is the only thing carrying the dose and the nuts and marshmallows push it around, so an under-mixed batch gives you rich corners and lean ones.

Scrape into the pan and press level with an offset spatula without compacting it — rocky road should keep its lumpy surface.

Lift the slab out and cut a measured 4 by 6 grid with a long knife warmed under hot water and wiped dry between cuts. Measure it rather than cutting by eye; uneven squares are uneven servings.

Keep the squares in a marked container in the refrigerator. Rocky road has a reputation as a children's party sweet, so it needs a written label and a shelf nobody browses.

Before you eat it
- These are estimates, not lab results. Treat the low end as the honest number and the high end as the thing to plan around.
- Start with one serving and wait two hours. Edibles take 30 to 120 minutes to come on, and the most common mistake is redosing before the first one lands.
- Test a small piece first. Potency is rarely even across a batch, especially if the infusion was not mixed thoroughly.
- Label anything you store with the date and the estimated dose, and keep it away from children, pets and anyone who did not ask for it.
- If you overdo it: you are not in danger, but it will be unpleasant. Find somewhere quiet, drink water, and wait it out. Do not drive.
