Chili crisp
A spoonable chili oil for eggs, noodles and rice. Made once, it doses a dozen meals a teaspoon at a time.

Ingredients
1 cup infused grapeseed oil
Set your infusion strength above and this splits into infused and plain grapeseed oil to hit whatever dose you want.

- 8garlic cloves — thinly sliced
- ½ cupcoarse chili flakes
- 2 tbsptoasted sesame seeds
- 1 tbspsoy sauce
- 1 tspsugar
- 1 tspsalt
Method

Fry the shallots in the plain oil over a medium-low heat, stirring often, until evenly golden. Lift them out with a slotted spoon onto paper towels.

Fry the garlic in the same oil until pale gold — it goes from done to burnt in seconds — and lift it out too.

Put the chili flakes, sesame seeds, sugar and salt in a heatproof bowl. Pour the hot frying oil over them and stand back; it will foam.

Let the mixture cool to barely warm. This wait is the whole trick: pouring infused oil into hot oil would cook off a meaningful share of what you made.

Stir in the infused grapeseed oil, the soy sauce and the crisp shallots and garlic.

Store in a jar in the fridge. Stir before each spoonful — the solids settle and the oil carries the dose.

Before you eat it
- These are estimates, not lab results. Treat the low end as the honest number and the high end as the thing to plan around.
- Start with one serving and wait two hours. Edibles take 30 to 120 minutes to come on, and the most common mistake is redosing before the first one lands.
- Test a small piece first. Potency is rarely even across a batch, especially if the infusion was not mixed thoroughly.
- Label anything you store with the date and the estimated dose, and keep it away from children, pets and anyone who did not ask for it.
- If you overdo it: you are not in danger, but it will be unpleasant. Find somewhere quiet, drink water, and wait it out. Do not drive.
