Lemon garlic vinaigrette
A three-to-one vinaigrette that doses a salad by the spoonful. Keeps a week in the fridge and lets everyone at the table pour their own.

Ingredients
½ cup infused olive oil
Set your infusion strength above and this splits into infused and plain olive oil to hit whatever dose you want.
- 2½ tbsplemon juice — freshly squeezed
- 1 tspdijon mustard
- 1small garlic clove — grated to a paste
- ½ tsphoney or maple syrup
- salt and black pepper
Method

Whisk the lemon juice, mustard, garlic, sweetener, salt and pepper together in a bowl until the salt dissolves.

Add the oil in a thin stream, whisking hard, until it thickens and stops looking separated. A jar and vigorous shaking works just as well.

Taste and adjust. It should be sharp — it will taste milder once it is on leaves.

Keep in a sealed jar in the fridge. It will separate as it chills; shake it hard before every use or the dose goes wherever the oil went.

Before you eat it
- These are estimates, not lab results. Treat the low end as the honest number and the high end as the thing to plan around.
- Start with one serving and wait two hours. Edibles take 30 to 120 minutes to come on, and the most common mistake is redosing before the first one lands.
- Test a small piece first. Potency is rarely even across a batch, especially if the infusion was not mixed thoroughly.
- Label anything you store with the date and the estimated dose, and keep it away from children, pets and anyone who did not ask for it.
- If you overdo it: you are not in danger, but it will be unpleasant. Find somewhere quiet, drink water, and wait it out. Do not drive.
