Marinara sauce
A long-simmered tomato sauce with the oil stirred in at the very end. Freeze it in portions and it doses pasta, eggs or pizza for a month.

Ingredients
6 tbsp infused olive oil
Set your infusion strength above and this splits into infused and plain olive oil to hit whatever dose you want.

- 56 ozcanned whole tomatoes — crushed by hand
- 1onion — finely diced
- 4garlic cloves — sliced
- 1 tspdried oregano
- ½ tspchili flakes
- 1handful basil leaves

Method

Soften the onion in the plain oil over medium-low heat until translucent, then add the garlic, oregano and chili for one more minute.

Add the tomatoes and a good pinch of salt, and simmer gently, uncovered, until it thickens and darkens.

Take the pot off the heat and let it stop bubbling.

Stir the infused olive oil right through the sauce, along with the torn basil. Forty-five minutes of simmering would have cost you most of an infusion added at the start — this is the difference between a dosed sauce and an expensive one.

Taste, season, and divide into eight portions. Freeze what you are not using in labeled single servings so the dose stays predictable.

Before you eat it
- These are estimates, not lab results. Treat the low end as the honest number and the high end as the thing to plan around.
- Start with one serving and wait two hours. Edibles take 30 to 120 minutes to come on, and the most common mistake is redosing before the first one lands.
- Test a small piece first. Potency is rarely even across a batch, especially if the infusion was not mixed thoroughly.
- Label anything you store with the date and the estimated dose, and keep it away from children, pets and anyone who did not ask for it.
- If you overdo it: you are not in danger, but it will be unpleasant. Find somewhere quiet, drink water, and wait it out. Do not drive.
