Terpenes

Myrcene

Earthy and musky, with ripe fruit underneath.

The most commonly named terpene in cannabis and the easiest to cook around, because ripe stone fruit and dark sugars meet it halfway. It is also the one behind the flavor people call grassy — a mango or a spoonful of molasses covers it better than vanilla does.

In the kitchen

Goes early

These are the lightest compounds in the plant and they leave first. Decarbing costs you most of them before the fat is even involved — the coolest step on the schedule is 200 °F, and that is already well past where they start moving. If this is the aroma you want, it has to come back into the dish from somewhere else: fresh zest, fresh herbs, a spirit, stirred in off the heat.

Pure myrcene boils at 167 °C / 333 °F. That figure is the isolated compound at atmospheric pressure, not a threshold in a pan. Dissolved in fat it leaves gradually and the butter holds some of it the whole way — which is why the band above is the number to plan around and this one is only a bearing.

Cook it with

The same compound is in mango, hops, lemongrass and thyme — which is the short version of why these pairings work. You are not matching a flavor to the cannabis, you are adding more of something the flower already tastes of.

DessertStandard

Apple crisp

Oat streusel over apples firm enough to hold their shape — Granny Smith or Braeburn, not a soft eating apple that collapses into sauce. Baked in ramekins, which takes the guesswork out of serving it.

Banana nut muffins

Muffin-method batter mixed by hand in one bowl, with bananas dark enough that the skins are mostly black. A high opening oven temperature is what gives the tops their dome.

Blondies

Brown sugar and vanilla carry the whole bar, with no cocoa to hide behind. That means the butter you use should be butter you would happily eat on toast, because the flavor is right out in the open.

Brown butter chocolate chip cookies

The standard creamed-butter drop cookie, with the butter browned first. Browning drives off water and deepens the flavor enough to cover any grassiness in the infusion.

Brown sugar shortbread

The classic one-two-three ratio: one part sugar, two parts butter, three parts flour. Almost half of it is butter, which makes it one of the most efficient carriers on the site.

Caramel corn

Baked low to set the caramel, then finished with infused butter off the heat. Most versions stir the infusion into boiling caramel and then bake it for 45 minutes, which throws away a good share of what you made.

From StrainTrackr. Each of these breeders named myrcene on their own product page — a claim about their cultivar, not a lab result. Most strains have no terpenes published at all, so this is a sample of what is documented rather than a ranking of what is strongest.
