Terpenes
Terpineol
Lilac and pine, soft and sweet.
Floral without linalool's sharpness, and sweeter. It sits well in rice puddings, poached fruit and anything with cardamom, and it takes an infusion without complaint.
In the kitchen
Survives infusion
Infusion is kind to these — every method on this site tops out at 200 °F, below where they go. Decarb is harder on them and a 375 °F bake harder still. They hold up best in something cooked gently or not at all: a no-bake, a sauce finished off the heat, a chilled dessert.
Pure terpineol boils at 219 °C / 426 °F. That figure is the isolated compound at atmospheric pressure, not a threshold in a pan. Dissolved in fat it leaves gradually and the butter holds some of it the whole way — which is why the band above is the number to plan around and this one is only a bearing.
Cook it with
The same compound is in lilac, pine, cardamom and marjoram — which is the short version of why these pairings work. You are not matching a flavor to the cannabis, you are adding more of something the flower already tastes of.
DessertStrong
A dipping caramel cooked to 245 °F and then allowed to fall to about 200 °F before the butter goes in — which happens to be the same temperature at which caramel coats an apple instead of sliding off it.

DessertStandard
Oat streusel over apples firm enough to hold their shape — Granny Smith or Braeburn, not a soft eating apple that collapses into sauce. Baked in ramekins, which takes the guesswork out of serving it.

BreakfastStandard
Cold butter, a light hand and two folds are what separate a flaky scone from a sweet biscuit. Infused butter straight from the refrigerator behaves like any other cold butter here.

A side dish carrying a modest dose, for a table where not everyone wants dessert. The butter goes in off the heat.

Peanut butter fudge rolled into balls and dipped so a bare circle shows on top, the way the nut does. Cold, firm centers are what keep the filling out of the chocolate bowl.

Mayonnaise, buttermilk and soft herbs whisked into a pourable dressing. Because it is spooned onto an individual plate, each person decides their own serving, which is the most forgiving arrangement there is.

From StrainTrackr. Each of these breeders named terpineol on their own product page — a claim about their cultivar, not a lab result. Most strains have no terpenes published at all, so this is a sample of what is documented rather than a ranking of what is strongest.
